The Noma influences show through via a fermentation facility, along with an open kitchen, and heavy interaction between the chefs and diners.
The 27 year old chef has an amazing CV, not only having worked at the four times "best restaurant in the world", (from 2016 until its closure in November 2017), but previously enjoyed two year stints at the 3 Star Michelin Gordon Ramsay Restaurant in Chelsea, the one star Michelin Gilpin Hotel & Lake House in Windermere, and the Michelin starred Chester Grosvenor, as well as Restaurant Amusé in Perth, Australia (awarded 2 stars by the Australian Good Food Guide). |

Culinary Breakthrough at Grafene
|
Ben Mounsey, former Head Chef at 2 AA Rosette The Lawns at Thornton Hall, and previously sous chef at Michelin Star restaurant Fraiche in Birkenhead, has taken the culinary helm at Grafene.
His new menu, launched this week, offers Ben’s interpretation of fine, contemporary British food, showing British eccentricity with an often-eclectic combination of ingredients. Dishes on his menu include cleverly reconstructed classics and plates to challenge a diner’s perception of familiar foods. To run alongside this, a cocktail collection featuring newly-crafted drinks has been introduced.
Infused with his humour, sense of fun and inspiration from his region, Ben promises a menu that “avoids the obvious, with surprises throughout. The result is a celebration of flavour; with a meticulous attention to detail and presented with purposeful simplicity.” |
