The Southern Eleven story begins in 2009. Working 80 hour weeks, I decided to take a short sabbatical. I found myself working in a BBQ house in Tennessee under the instruction of Dustin the pit boss, from him I learnt the art of smoking.
Slow cooking great slabs of pork until the pinky smoke rings ran straight to the bone and strips of meat fell from it with ease. The brisket sliced so fine and so tender and the ribs juicy, meaty and full of flavour would be plonked on and a plastic plate and served to order. I had died and gone to heaven.

I immersed myself in BBQ taking small smokers home to the UK and practising on every type of meat I could get my hands on, treating each piece with love and affection, it was hand rubbed with herbs and spices, brined, spritzed with apple juice and slathered with sauce. My family enjoyed a BBQ feast night after night, the local salvation army even enjoyed some when there wasn’t enough people at home to eat it all.
I felt ready so I applied to the Manchester Food and Drink festival, recruited family and friends to help and that was where Southern Eleven began. In the confines of a small tent amongst an array of different foods we served hundreds of people our slow smoked pulled pork, brisket and baby back ribs. Southern Eleven
Opened in July 2011, Southern Eleven offers a ‘new style' American BBQ experience in the centre of Manchester's Spinningfields. Maintaining authenticity at its heart, traditional, home-style favourites from the eleven southern states are reinvented with a contemporary twist, brought to the table with the use of genuine cooking techniques .
Oklahoman wood smokers slow cook and infuse the freshest, locally sourced ingredients with a succulent, hickory flavour, while an intimate and stylish dining scene provides the perfect backdrop for sampling the inspired menu.
The locally sourced meat is coated in their in house rub, a secret combination of herbs and spices, giving it time to soak up the flavour before it even hits the smoker. It is then slow smoked in their Oklahoman wood burning ovens for up to 20 hours until it is melt in your mouth tender and ready for a slathering of home-made sauces . Served up with a freshly made cornbread & jalapeno muffin, BBQ beans or parmesan truffle fries for a glorious BBQ feast.
All of the food at Southern Eleven is cooked in the most traditional and authentic way using well-honed techniques, producing a BBQ that delivers the maximum in taste, enhanced by a selection of delicious sides.
