I immersed myself in BBQ taking small smokers home to the UK and practising on every type of meat I could get my hands on, treating each piece with love and affection, it was hand rubbed with herbs and spices, brined, spritzed with apple juice and slathered with sauce. My family enjoyed a BBQ feast night after night, the local salvation army even enjoyed some when there wasn’t enough people at home to eat it all.
